- 1 giant candy potato (about 12 ounces)
- 1 giant bell pepper, sliced
- 1 medium pink onion, sliced in rings
- 1 can (12 ounce) can tomatoes with inexperienced chilies
- 1 cup lower-sodium vegetable or rooster broth
- 1 teaspoon floor cumin (elective)
- ¼ teaspoon salt
- 1 pound cod fillets (or another fish!)
- For serving: Corn tortillas, shredded coleslaw combine, recent cilantro, plain Greek yogurt
Chop candy potato into ¾-inch cubes (don’t peel candy potato.)
Spray 5-6 quart slow-cooker with non-stick cooking spray. Place candy potato, peppers, onions in sluggish cooker. Pour tomatoes and broth over greens. Sprinkle with cumin and salt; combine to mix. Cook dinner 4-6 hours on HIGH, or 6-8 hours on LOW.
